The Tip Jar - Brewing 101: Toddy Cold Brew Basics

ToddyCold coffee…? Really? I thought you were supposed to dump out cold coffee? Well, typically, yes, but when intended to be served cold it is a sweet & refreshing drink. The Toddy Consumer model features a brew container, where grounds steep with room temperature water for extended periods of time (typically 12-18 hours) to bring out a different side of coffee than what is typically extracted with hot brewing methods. This method results in a richer, bolder and even 67% less acidic drink than that of a hot brew method. Take note, this method produces a concentrate which can be utilized in a myriad of ways. Not only is The Toddy good for coffee, but it can also be used just as well with teas.

To make Toddy cold brew you will need several items: a Toddy Consumer Model, a timer, a scale, a measuring cup, a carafe and coffee. This particular method requires 12 ounces of coarsely ground coffee and 7 cups of water.  First, take the rubber stopper and insert it firmly into the  outside bottom of the brew container, you are going to have liquid in the container for at least 12 hours so ensure it is not going to come out. After that, take the filter and pre-wet it before inserting it into the cut out on the inside of the brew container. Once you have the container prepared you can weight out your coffee and grind it. Like I said earlier, use a coarse grind. Think of what you would use for a french press, grounds similar size to bread crumbs. If you go much finer, the grounds will get trapped in the filter and draining the brew container later on is going to be difficult. Believe me, I speak from experience.

Now that the coffee is ground, you can start to add to the brew container. This is done in a layering method to ensure all of the grounds are soaked evenly, you want to avoid stirring the grounds once everything is added, that can result in a clogged filter. First you are going to add one cup of water to the brew container. Next, add 6 ounces of the ground coffee. Slowly add 3 more cups of water, pouring them in circular motion over the grounds. Add the remaining 6 ounces of the ground coffee. Now, wait 5 minutes before adding the last 3 cups of water. Lastly, take the back of a spoon and gently push down all the grounds so they are wet.

After everything is done the waiting begins. This is where you can decide how concentrated you want your Toddy concentrate to be. The longer it steeps, the more concentrated it will be. Vice versa, the shorter it steeps, the less concentrated it will be. I personally steep mine for around the 12-hour mark and am happy with the way it turns out. Once you’ve decided it has steeped long enough, hold the brew container over the included glass decanter and remove the rubber stopper. The concentrate should flow in a steady stream until the container is empty, if not you may have some grounds stuck in the filter. To fix this, simply take a spoon and scrape the grounds away from the filter. After the draining has stopped, replace the stopper back into the bottom of the brew container. Cap the glass decanter and place it in your fridge, it will stay fresh for up to 2 weeks. For a classic cold coffee, Toddy recommends 1 part concentrate and 2-3 parts water. Sip & enjoy!
