Island Barbecue Sauce
Rich with the island flavors of molasses, orange and rum, this sauce can be brushed generously over grilled chicken, pork or beef or used as a flavorful marinade.
Ingredients:
1/2 cup Rum Syrup
1/2 cup orange juice
1/2 cup minced onion
1/2 cup lightly packed brown sugar
3 TBL spoons white vinegar
2 TBL spoons molasses
1 TBL spoon minced garlic
1 TBL spoon tomato paste
1 teaspoon dried ginger
1/2 teaspoon ground allspice
1/4 teaspoon red chili flakes
Directions:
Simmer all ingredients together in a small saucepan until thickened slightly, about 15 minutes. Use as you would any barbecue sauce. Sauce can be stored in the refrigerator for up to 2 weeks.

approximately 1 cup
