Apple Coffee Cake (low-sugar)

CAKE
Ingredients:
1 cup unbleached flour
1/2 cup whole wheat flour
1/2 cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 cup apple juice
1/4 cup nonfat sour cream
1 egg white, lightly beaten
2 1/2 cups thinly sliced peeled apples (about 2 medium)
1/4 cup chopped walnuts

Directions:
Preheat oven to 350°F. Place the flours, sugar, baking soda, and cinnamon in a medium sized bowl, and stir to mix well. Stir in the apple juice, sour cream, and egg white and mix until just combined. Fold in the apples and walnuts. Coat a 9 inch round pan with nonstick cooking spray. Spread the batter evenly in the pan. Bake for 30 minutes, or until a wooden toothpick inserted in the center comes out clean and the top springs back when lightly touched.

GLAZE
Ingredients:
1 cup powdered sugar
3 tablespoons Sugar-Free Vanilla Syrup

Directions:
To make the glaze, mix the powdered sugar and syrup in a small bowl. While the cake is still warm and in the pan, pour the glaze over the top. Allow the cake to cool for at least 45 minutes before cutting. Serve warm or at room temperature.
